    Oh man!!!! How I would love to have bunches of those to make into pickles! (Mine have to come from a “factory” nowadays!!!! (I suppose that I should thank you for reminding me to BUY some on the next trip to the store!)

    Wow, the beets in the photo look so fresh.
    They’re good cooked fresh, canned, pickled, and yes, roasted. Harvest time.

    ROASTED beets! Halved or quartered, dressed with olive oil and salt & pepper to taste and roasted in the oven until slightly browned; they are simply delicious. And for something really pretty for the dinner table, do the same with brussels sprouts and carrots along with the beets. They are beautiful to look at and taste wonderful. And if you don’t like brussels sprouts, try this anyway. Roasting them brings out a wonderful nutty flavor. YUM!

      Beets and other veggies can be roasted on the grill in foil.

    Small fresh beets steamed or baked, then sliced and buttered before serving – yum! Another summer side dish is to cut off the fresh beet greens and steam them just a few minutes until wilted, like spinach, then serve with a splash of apple cider vinegar. That is how my New England ancestors prepared them as I do now.

    • I’ve steamed the beets tops, but never added a splash of apple cider vinegar. Sounds yummy!!

    Pickled is our favorite way to prepare them… My mom used to simmer in butter (from her parent’s cows). Ummm, healthy eating! Greens can go in salad too.And I am grateful to have inherited the wooden bowls from past generations. Same grandmother who had quilts hanging from the ceiling while doing the quilting by hand with
    her sisters -in-law and cousins sitting and sewing all round. Thanks for trip down memory lane!

  • Beets!!! These are so healthy and delicious when you put them in a vitamix and add other fruit and veggies to make a yummy smoothie! Or use them for lipstick!
